Towns Wine Co Inkwell Pinot Noir 2022

Inkwell, Towns Wine Co.’s first release, is a limited run of high-quality Pinot Noir from Overberg, South Africa. The wine expresses the unique site of Overberg with its shale-derived, clay-rich soils adding minerality and complexity in the final product. It is produced by a vineyard manager and cellar assistant from the highly lauded winery of Hamilton Russell.

Eido Da Salgosa Albariño 2021

100% Albariño from the Sobrada vineyard, which features soils composed of granitic sand and some clay. The grapes are pressed directly and the must is cooled and decanted for 24 hours. After the fermentation, the wine rests on the lees for four months before bottling.

Vico expresses all of its potential from a unique and ancient terroir on Mt Etna, being sourced. It comes from one of the very few parcels in the contrada Santo Spirito that were not covered by the lava flow of 1879.

A luxurious sake from a well-honored brewery in Nagano, Japan, whose first Toji has been called the “father” of sake brewing. This incredibly balanced sake highlights the craftsmanship and skills of its renowned brewers.

Located in Matsumoto City in Nagano, they are situated between Toyama and Niigata, both coastal-facing regions where there is so much more humidity in the air. The mountain ranges of those prefectures protecting Nagano results in Nagano’s air being much more dry.  Humidity in there creates a big risk of mold and mildew in the rice paddies, which is not a concern for Nagano sake breweries, and makes it possible for them to eschew the use of pesticides.

The brewery takes an exacting approach to how they produce their product, micro-managing each step of the process from rice paddy to bottle. Despite the precise attention to detail, the kura itself rarely uses modern technology, instead forcing the employees to hone their sense and intuition in crafting their product.
