Deborah Parker Wong for The Tasting Panel attended the event hosted by Cyril Delarue, sixth-generation proprietor of Champagne Bollinger, to celebrate the release of their Bolinger 2008 R.D. Extra Brut. R.D. which stands for “recently disgorged” began with its first vintage bottled in 1952 and released in 1967 and remains to be a highly-sought after cuvée for collectors. The 6-course menu paired with nine of Bollinger’s finest was held at The Progress in San Francisco.
